Grilled veggies

 

Ingredients (serves 4)

With this dish you can choose any of your favourite vegetables to roast! The list below is optional of what you want to include.

 

  • 3 peppers of your choice (green/red/yellow/orange), cut into quarters
  • 3 medium courgettes, cut diagonal, approx 1cm slices
  • 2 medium aubergines, cut lengthways, approx 1cm slices
  • 1 large onion, chopped into quarters
  • 2 large carrots, cut width ways approx 1cm slices
  • 1 broccoli, split into medium sized fleurettes
  • 1 cauliflower, split into medium sized fleurettes 
  • 3 whole garlic cloves, crushed
  • Olive oil

 

Method

 

1. Cut veggies into pieces about the same size, place on a rimmed baking sheet. 

2. Drizzle with olive oil, garlic, salt and pepper then get your hands stuck in and mix it around!

3. Spread evenly on a baking sheet so the vegetables cook nicely.

4. Roast for approx 25 minutes (or until you like them)

 

 

REMEMBER! ALWAYS LET AN ADULT HELP YOU WITH THE OVEN AND BOILING WATER, AND DON'T FORGET TO TURN THE OVEN OFF WHEN YOU'VE FINISHED!
