Ingredients (serves 4):
4 large potatoes
60g sour cream
Freshly chopped chives
2 spring onions, thinly sliced, white and green parts divided
75g grated Cheddar
6 slices crispy bacon
1. Preheat oven to 200°C then prick potatoes all over with a fork or sharp knife and wrap tightly in foil. Bake until soft, about 1 hour.
2. Unwrap potatoes and cut lengthwise slits in the top of each. Carefully scoop out potato from centre into a medium bowl.
3. Then add butter, sour cream, chives, spring onion whites, half the cheddar, and half the bacon. Season with salt and pepper.
4. Spoon filling back into each potato, mounding it on top. Sprinkle with remaining cheese and return to oven until melted (5 mins). Top with spring greens and remaining bacon.
REMEMBER! ALWAYS LET AN ADULT HELP YOU WITH THE OVEN AND BOILING WATER, AND DON'T FORGET TO TURN THE OVEN OFF WHEN YOU'VE FINISHED!
